How to Use Handwa Mix
- Soaking : Soak the Handwa Mix overnight in water, curd, or buttermilk for proper fermentation. Alternatively, you can soak it in water and allow it to ferment naturally.
- Batter Preparation : Add salt and a rising agent such as Eno or baking soda/gluten free baking soda to the soaked batter.
- Add Vegetables (Optional but Recommended) : Mix in grated vegetables like cabbage, bottle gourd (lauki), carrot, finely chopped onions, and green chillies (optional). Alternatively, you can simply add a pinch of red chilli powder and fresh coriander leaves for flavor.
- Cooking Process :
- Heat oil in a kadai or non-stick pan.
- Add white sesame seeds (til) and curry leaves for tempering.
- Pour the prepared batter over the tempering and spread it evenly.
- Cover and cook on medium flame until the bottom turns golden brown.
- Flip and cook the other side until fully done.
- Serving Suggestion : Handwa is a savory pancake-like dish — serve hot with chutney or yogurt.
